Bûche de Noël (Yule Log)Recipe

Bûche de Noël - French Christmas dessert recipe for 6-8 persons.

Dough

  • 4 eggs
  • 1/2 cup (125 grams) sugar
  • 1 cup (100 grams) flour

Directions
Separate whites and yolks. Mix the sugar with the egg yolks until creamy. Add the flour, mix well. Beat the egg whites until firm, you should be able to turn the bowl over without contents falling, but don't beat to the point where the whites crack. Pour whites on top of the yolks-sugar-flour mixture and slowly mix by stirring from bottom to top. Then pour the mixture on a baking sheet lined with buttered parchment paper. Bake 10-12 minutes at 375° F, the dough should be soft. Remove from oven, roll cooked dough, including parchment paper and leave at room temperature.

Filling

  • 3.5 ounces (100 grams) dark chocolate
  • 2 egg yolks
  • 1 egg
  • 1/3 cup (80 grams) sugar
  • 1/2 cup (50 grams) flour
  • 2 cups (1/2 liter) milk

Directions
Heat milk in pan and add chocolate to melt. In a bowl, mix the sugar, egg yolks, egg and add the flour. Add melted chocolate. App mixture to saucepan on low heat to thicken. Once solid, cool. Unroll the dough and pour the filling over, then roll again to form a log.

Frosting

  • 2 egg whites
  • 2/3 cup (150 grams) softened butter
  • 3.5 ounces (100 grams) grated dark chocolate
  • 1/2 cup (125 grams) sugar

Directions
Mix sugar and egg whites in bain-marie (double boiler), stir gently. Grate chocolate and add to butter, mix well. Refrigerate for one hour to cool. Once cooled, pour on log and cover. With a fork, make long lines and decorate log. You can cut one extremity and put it on the log as a branch.
