HangoutsJan & Jeff (#4)
Hangout starts with Jan and Jeff talking about the weather France is having at moment: sunny but cold and windy - 120 kph/75 mph in the Rhône valley where Jan lives. Jan adds that in Huntington Beach there was hail covering the beach. Jan goes on to talk her cooking. She was inspired by an American living in Paris making Tarte Titan. Jan buys lots of apples that she makes into applesauce. She doesn't cook the apples down all the way and adds some vanilla and lemon for flavor. Jan calls this a diet Tarte Titan. Jeff explains how walnut oil is made - à l'ancienne (in the traditional way). First the walnuts are crush, in the old fashion way a heavy wheel would be pulled by a horse. Then the walnuts are heated and then pressed to extract the oil. See below for photos. Jan comments that she cooks with sesame oil, but doesn't buy a lot as it turns over time as she doesn't use a lot when she cooks. Jeff mentions that an American went to France for medical treatment in summer 2014. It was cheaper for the American health insurance company to send this person to France than to have treatment in the US. The person had surgery in Toulouse and did some sightseeing during their stay. There is a French company that specializes in medical tourism. Jan tells the funny story of getting treatment in France from an American doctor from California. The Hangout ends with Jan talking about going to the local truffle market in the coming week. Jan's applesauce. She adds a little vanilla and lemon. Watermill. Inside the mill. Grinding wheel on the right and press on the left. After being crushed and heated, walnuts are pressed here. Horse drawn wheel used to crush walnuts.
